Amy Roloff from Roloff Farms and TLC LittlePeopleBigWorld did a cooking demonstration today at the new Fred Meyer Stadium store in downtown Portland. The newly remodeled store has a beautiful second floor mezzanine which includes a glass enclosed kitchen and seating area for demos and classes. The large windows overlook NW Burnside and Providence Park area.
Amy was on site to share with everyone three recipes using the new Roloff Farms Salsa. The Roloff Farms Salsas are available at Fred Meyer, Roths and other local Portland stores. She cooked and talked for about 1 1/2 hours and shared a lot about her life as a mom and how that is now evolving for her. She also spoke of the filming with TLC and that it has now spanned 13 years at the farm. She updated us on her married sons Jeremy who is now living in Bend, Oregon and Zack who is coaching and lives in the Portland area. They are getting ready for pumpkin season at the farm which opens October 3rd and runs through Halloween.
She shared three recipes each using a different Pumpkin Salsa. I did a taste test of the three salsas a few weeks ago and really enjoyed them all. She was able to use the beautiful kitchen to cook it all up and then share it with us. She was open to answer any questions during the cooking and stayed afterward to sign autographs and take pictures with anyone who wanted to meet her.
I have to say I came away with a new respect for the dynamic woman that she is. After watching the TLC show from the beginning you can now see that she and her husband are going through changes within their family and themselves. Amy seems to be continually on high speed with running her own Amy Roloff Charity Foundation plus doing speaking around the country and also contributing her time to other charities as well. She will be part of the Get Motivated conference here in Portland on October 22. She is also doing the walk/run for RunFoster.org plus finds time to take time for herself with her own interests like starting a new improv class this next week. She was such a joy to meet and definitely an inspiration for any woman. Thank You to Amy Roloff!
